 Ingredients:

  • 3 1/2 tablespoons butter, divided
  • 1 medium red bell pepper, chopped (about 1 1/4 cups)
  • 1/2 cup chopped yellow onion
  • 1 (20 oz) package refrigerated shredded hash brown potatoes
  • 8 oz chopped cooked ham*
  • 6 large eggs, lightly beaten to blend whites and yolks
  • Salt and freshly ground black pepper, to taste
  • 3/4 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley

*You can use leftover holiday ham or store-bought diced ham.

Instructions:

Step 1: Sauté the Vegetables

Melt 3 tablespoons butter in a 12-inch cast iron skillet (or other heavy skillet) over medium-high heat.
Add the chopped red bell pepper and onion, and sauté for about 3 minutes until they begin to soften and become fragrant.


Step 2: Add the Hash Browns

Toss the shredded hash brown potatoes into the skillet with the vegetables.
Spread the mixture into an even layer and season with salt and black pepper to taste.
Let the potatoes cook, stirring only occasionally, until they begin to turn golden brown — about 6–7 minutes.


Step 3: Stir in the Ham

Add the chopped ham to the skillet and continue cooking until the potatoes are tender and cooked through, about 3 minutes longer.


Step 4: Cook the Eggs

Push the potato mixture to one side of the pan.
Reduce the heat to low.
Melt the remaining 1/2 tablespoon butter in the empty half of the skillet.

Pour the beaten eggs into the buttered side of the skillet.
Season with a little more salt and pepper.
Cook the eggs, stirring gently, until they are just set and no longer runny.


Step 5: Combine and Finish

Toss the eggs and potato-ham mixture together in the skillet.
Sprinkle over the shredded cheddar cheese and toss just a few times to melt the cheese and combine all the flavors.

Finish with a sprinkle of chopped fresh parsley for a burst of color and freshness.
