Raspberry Vanilla Cupcakes – Light, Fruity & Frosted to Perfection!

These Raspberry Vanilla Cupcakes are a dreamy blend of soft vanilla bean cake and fresh raspberries, topped with a silky buttercream frosting. Perfect for spring parties, birthdays, baby showers, or whenever you’re craving a fruity dessert with a touch of elegance.


📋 Ingredients

Dry Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt

Wet Ingredients:

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 vanilla bean (or 2 tsp vanilla extract)
  • ½ cup whole milk, room temperature

For Cupcake & Frosting:

  • 1 cup fresh raspberries
  • ½ cup raspberry jam (optional for filling)
  • 1 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • Fresh raspberries, for garnish

👩‍🍳 Instructions

1. Preheat Oven:
Set your oven to 350°F (175°C) and line a 12-cup muffin tin with liners.

2. Mix Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, and salt.

3. Cream Butter & Sugar:
In a large bowl, cream softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in vanilla bean seeds or extract.

4. Combine Batter:
Add dry ingredients and milk alternately in three parts, mixing gently. Fold in the fresh raspberries carefully to avoid crushing.

5. Bake:
Scoop batter into liners and bake for 18–20 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

6. Optional Filling:
Once cooled, use a piping tip or small spoon to hollow out the center of each cupcake. Fill with raspberry jam if desired.

7. Make Frosting:
Beat butter until smooth, add powdered sugar, heavy cream, and vanilla extract. Beat until fluffy. Frost the cupcakes and garnish with a fresh raspberry on top.
