Creamy Dill Pickle Chicken Salad – Tangy, Crunchy & Protein-Packed

 Ingredients:

  • 2 cups cooked chicken, shredded or diced
  • 1 cup dill pickles, diced
  • ½ cup celery, diced
  • ¼ cup red onion, finely diced
  • ¼ cup green onion, thinly sliced
  • 1 tbsp fresh dill, chopped (or 1 tsp dried dill)

For the Creamy Dressing:

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp dill pickle juice (straight from the jar!)
  • 1 tbsp Dijon mustard
  • Salt and pepper, to taste

Directions:

  1. Combine chicken, pickles, celery, red and green onions, and dill in a large bowl.
  2. In a separate small bowl, whisk together the mayo, sour cream, pickle juice, mustard, salt, and pepper.
  3. Pour the dressing over the chicken mixture and toss until evenly coated.
  4. Enjoy right away or chill for an hour (or overnight) for even better flavor.

  • Use any combo of red + green onion = ¼ cup total
  • Sub in Greek yogurt for part of the mayo/sour cream
