  • 2 tbsp olive oil
  • 1 stick butter, divided

  • ½ cup dry white wine
  • 1½ cups uncooked white rice
  • 3 cups chicken broth
  • ½ cup freshly grated Parmesan cheese

1. Cook the Chicken
Season chicken with salt, pepper, and garlic powder. In a large nonstick skillet, heat olive oil over medium heat. Sear the chicken on both sides until browned and cooked through. Remove and cover to keep warm.

2. Build the Sauce
In the same skillet, melt half the butter. Add garlic, red pepper flakes, and ½ tsp salt. Sauté for about 3 minutes, stirring often to avoid burning the garlic.

3. Deglaze with Wine
Raise the heat to medium-high and add the white wine. Stir vigorously to combine. Simmer for about 5 minutes until reduced by half. Scoop out 2 tablespoons of the sauce and set aside for finishing.

4. Toast the Rice
Add the rice to the skillet and stir for 3–4 minutes, letting it toast and absorb the flavors. Pour in chicken broth and remaining salt. Bring to a low boil, then reduce heat to medium-low, cover, and simmer for 20 minutes. Stir a couple of times during the first 15 minutes.

5. Finish and Serve
Sprinkle Parmesan over the rice and stir gently. Return the chicken to the skillet, placing it over the rice. Drizzle the reserved pan sauce on top. Cover and let sit for 5 minutes off heat before serving.
