  • ½ cup diced tomatoes
  • 2 green onions, sliced
  • 1 tbsp fresh cilantro, chopped
  • ¼ cup crumbled feta

Directions

1. Roast the Sweet Potatoes:
Toss diced sweet potatoes in oil and spices. Roast at 425°F (220°C) for ~20 minutes, flipping halfway, until tender and slightly crisp.

2. Cook the Quinoa:
Sauté onions in oil until tender (5-7 min). Add garlic and spices; cook 1 more min. Stir in quinoa and water, bring to a boil, then simmer covered ~15-20 min until fluffy.
